- 8young sweet potatoes, peeled
- Young carrots, peeled and sliced
- Leeks, sliced
- U.S. turkey breast halves
- Cup chicken stock
- ½ cup black olives
- Tbsps. vinegar
- Tbsps. vegetable oil
- Tsp. rosemary
- Salt to taste
- Heat oil in a pot over medium heat.
- Add U.S. turkey breasts and stir until brown.
- Add vinegar, stock, rosemary and salt.
- Cover and simmer for one hour, or until cooked through.
- Add sweet potato, carrots, olives, and leeks.
- Cook for 30 more minutes. Serve.
