MOZZARELLA TOAST WITH PESTO, TOMATOES AND BASIL

MOZARELLA-LANDSCAPE
INGREDIENTS

Pesto sauce

  • 4 cups fresh basil leaves
  • 250ml organic olive oil
  • 1 clove of garlic, peeled
  • 100g grated parmesan cheese
  • 50g pine nuts
  • Salt to taste
  • 1 slice bread toasted
  • 1 mozzarella
  • 2 tbsp. pesto sauce
  • 1 small tomato
  • Some radishes
  • Fresh basil
  • 1 tsp olive oil
  • Salt
PREPARATION

Pesto sauce

  1. Blend all the ingredients together with a blender or mixer.
  2. You can add more olive oil if needed, depends on the consistency that you want.

Toast

Spread pesto sauce on the bread, add the sliced mozzarella, tomatoes, radishes, some fresh basil leaves, the olive oil, and salt.
