GLUTEN FREE BRIOCHE

INGREDIENTS |
- 3 3/4 cups gluten-free baking flour
- 1/2 cup sugar
- 3 tsp psyllium husk
- 3 tsp baking powder
- 3 eggs
- 2/3 cup butter, melted
- 1 tbsp instant yeast
- 1 1/2 cups warm milk
Egg Wash:
- 1 egg
- 1 tbsp milk
PREPARATION |
- Mix the warm milk, yeast, and 1 tablespoon of sugar. Let it sit for about 15 minutes until foamy.
- In a mixing bowl, combine the remaining sugar, psyllium husk, baking powder, eggs, and flour. Mix slowly until everything is incorporated.
- Pour in the melted butter and mix for about 3 minutes on medium speed.
- Cover the dough and let it rise for 45 minutes (first rise).
- Transfer the dough into a loaf pan or divide it into smaller portions and shape as desired.
- Cover again and let it rise (second rise) while preheating the oven to 180°C.
- Brush the brioche with the egg wash, then bake on the middle rack with heat from below for 35–45 minutes.
- Once baked, brush with melted butter and sprinkle sugar on top. Return to the oven with top heat only until it turns golden.
- Cover the hot brioche after baking and allow it to cool completely to preserve its softness.
